50여 년 전만해도 아구는 모양도 험상궂고 특별한 맛도 없다 하여 아무도 먹지 않는 생선이었다. 마산 부둣가에 그대로 버려진 아구를, 어부들이 선술집에 가져와 술안주로 만들어 달라고 부탁한 것이 아구찜의 시초가 됐다. 요즘처럼 콩나물, 미나리 등 야채가 들어가 본격적인 요리가 되기 시작한 것은 60년대 중반쯤인 것으로 알려져 있다. 천대받던 아구가 술 안주 계의 제왕으로 등극해 이제 마산은 물론이고 전국 각지에 아구찜 전문점들이 성업 중이다. 서울 신사동의 아구찜 골목, 부산 수영구의 옥x 아구찜, 일산 풍동의 본x 아구찜 등등… 수 많은 아구찜 집을 전전하며 그 쫄깃 담백한 아귀의 살과 매콤한 콩나물 맛을 즐겨오던 사람 중 하나로서, 뉴질랜드로의 이민은 곧 “아구찜과의 결별에 다름 아니었다” 라고 표현한다면 지나친 과장일까?
뉴질랜드에도 아귀를 파는 곳이 있다고 들었다. 하지만, 한국 아귀와는 살집이나 그 쫄깃함의 정도에 차이가 많다는 것이 먹어본 사람들의 증언이었다. 게다가, 아구찜의 진수는 알싸하게 매운 고춧가루에 버무려 아삭하게 쪄낸 콩나물이 아니던가. 향긋한 한국 미나리와 미더덕은 또 어디서 구한담?
아구찜과의 감격적인 재회
만사가 귀찮던 어느 날 저녁, 왕룽갈비를 찾은 것은 그냥 아무거나 먹고 한끼 때울 요량에서였다. “뭐 먹지? 갈비집이니까 갈비탕을 먹을까?”하며 신랑과 함께 메뉴판을 훑던 중 아구찜을 발견했다. 미디엄 $60, 라지 $100 …. “헉. 둘이 먹기엔 너무 비싸다.”하며 얼른 메뉴판을 뒤집자 그날따라 내가 안쓰러워 보였는지, 남편이 간만에 허세를 부린다. “내가 쏠게. 그 정도는 사줄 수 있어.”
‘한국에서도 잘하는 집 아니면, 콩나물만 잔뜩이고 아귀는 뼈다귀 밖에 없던데…. 뉴질랜드는 어련하겠어?’하며, 괜히 시켰나 후회하던 참에, 드디어 아구찜이 등장했다.
오올~ 이거 생각보다 꽤 살집이 통통한데? 하얀 살점을 젓가락으로 한 뭉터기 떼어 빨갛게 먹음직스러운 콩나물을 그 위에 얹고 입에 살포시 집어넣는 순간은 사뭇 경건하기까지 했다. 이내 우리 부부는 동시에 소리쳤다. “사장님 여기 소주 한 병이요!”
2007년 9월, 왕룽갈비를 인수하셨다는 사장님 내외는 내가 가 본 뉴질랜드 식당 중 가장 인심이 후하신 분들이다. 밥은 무조건 공짜, 식사 후 맛있는 커피도 공짜 ~. “쌀 값이 많이 올랐는데 괜찮으세요?”라고 묻자, “우리 집 밥 맛있다고 더 달라는 분들한테 그래도 어떻게 돈을 받아요.” 라며 사람 좋게 웃으신다. 덕분에 아구찜의 하일라이트 격이라 할 수 있는, 남은 양념에 밥 볶아 먹기는 추가 부담 없이 양껏 즐길 수 있다.
이 곳 아구찜의 맛의 비법은 한국의 유명한 아구찜 전문점에서 직접 전수받은 양념 노하우 때문이기도 하지만, 최대한 좋은 재료를 사용하고자 노력하시는 덕분이기도 하다. 아구와 미더덕은 비싸더라도 꼭 한국에서 공수해온걸 사용하고, 콩나물은 항상 신선한 상태를 유지하도록 하며, 향긋한 맛이 생명인 미나리는 집에서 직접 키운 것만 쓰신다고 한다. 이 가게의 주방장인 사모님은 뉴질랜드라는 지역적인 한계상 재료 사용에 한계가 많다며 “더 맛있게 할 수도 있는데…”라며, 아쉬운 표정을 지으셨다.
아구찜 맛있게 먹는 법
하나. 적당한 양을 주문한다.
- 2인 : 미디엄 ($60) – 공기 밥과 함께 배불리 먹어도 콩나물 양념이 남을 것이다. 남은 것은 집에 꼭 싸와서 밥을 볶은 후 야참이나 다음날 도시락으로 활용한다.
- 3인 : 미디엄 ($60) – 아구찜을 먼저 먹은 뒤 밥을 볶아 먹으면 딱 배부르다.
- 4인 : 미디엄 ($60) – 여자 4명이면 적당히 먹을 듯. 식탐이 좀 있는 사람이 한 명이라도 낀다면 감자탕 하나 정도 추가 주문을 하는 게 안전하다. (이 집 감자탕도 별미!)
- 5인 : 라지 ($100) 또는 미디엄($60) + 감자탕 또는 영양탕 ($30)
Tip) 주문하실 때 매운맛과 덜 매운 맛을 선택하실 수 있다.
둘. 아구찜이 나오기 전에 반찬을 많이 집어먹지 않는다.
셋. 아구 살은 와사비 장에 찍어먹으면 더 맛있다.
넷. 너무 매우면, 함께 나오는 물김치로 시원하게 입을 달랜다. 매울 때 단 음료를 마시면 더 맵다.
다섯. 다 드시고 나면 꼭 밥을 비벼 달라고 주문하시라. (추가요금 없음) 개인적으로 살짝 눌어붙게 볶아먹는 걸 더 좋아하는데, 이 곳은 그냥 참기름과 김 가루를 넣고 비벼주시는 게 아쉽다면 아쉬운 점이다. 꼭 볶아 드셔야 한다면…. 아구찜과 공기밥을 함께 드시고, 남은 양념은 집에 포장해가시길.
아귀에 관한 토막상식
아구의 표준어는 아귀다. 비늘이 없고 이빨이 날카로우며, 바다의 괴물이라 불릴 정도로 험상궂고 못 생겼지만 생긴 것과는 달리 맛과 영양이 풍부하다. 특히, 아구는 비린내가 적고 지방이 적어 소화가 잘 되며, 다른 생선들이 잘 가지고 있지 않은 비타민 A가 많이 들어있어 겨울철 피부미용에 그만이다.
